  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the dried split peas under cold running water and pick out any debris or discolored peas. Set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
