  • 1 teaspoon dried thyme
  • 1 piece bay leaf
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons, chopped (optional for garnish) fresh parsley
  • 2 cups (if needed for thinning) water

Directions

Step 1

Rinse the dried split peas in a colander under cold running water. Sort through them to remove any debris or stones. Set aside to drain.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 3

Add the diced onion, celery, and carrots to the pot, and sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Stir in the minced garlic and cook for an additional 1 minute.

Add the smoked ham hock (or diced smoked ham), rinsed split peas, chicken or vegetable broth, dried thyme, and the bay leaf to the pot. Stir to combine.
