  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Rinse the dried split peas under cold water until the water runs clear. Set them aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery to the pot. Sauté the vegetables for about 5-7 minutes, or until they become tender and the onion is translucent.
