Ingredients

  • 1 pound Dried split peas
  • 1 piece/cup Ham bone or diced ham
  • 3 large Carrots
  • 3 Celery stalks
  • 1 medium Yellow onion
  • 2 cloves Minced garlic
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 1 Bay leaf
  • 6 cups Chicken broth
  • 1 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Rinse the dried split peas under cold water until the water runs clear. Set aside to drain.

Step 2

Peel and dice the carrots, slice the celery, and finely chop the onion.

Step 3

Add the split peas, ham bone or diced ham, carrots, celery, onion, garlic, dried thyme, dried rosemary, and bay leaf to the crockpot.

Step 4

Pour in the chicken broth and water, then add the salt and pepper. Stir gently to combine all the ingredients.

Step 5

Cover the crockpot with its lid and cook on LOW for 8 hours or HIGH for 4-5 hours, until the peas are tender and the soup has thickened.

Step 6

If using a ham bone, carefully remove it once the soup is done cooking. Shred any remaining meat off the bone and stir it back into the soup.

Step 7

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 8

For a smoother texture, use an immersion blender to partially blend the soup directly in the crockpot, leaving some chunks for a hearty consistency.

Step 9

Ladle the soup into bowls, garnish with chopped parsley if desired, and serve hot.
