Ingredients

  • 4 pieces large ripe tomatoes
  • 2 tablespoons olive oil
  • 4 cups fresh spinach
  • 2 pieces garlic cloves, minced
  • 4 ounces cream cheese, softened
  • 0.333 cup grated Parmesan cheese
  • 0.25 cup breadcrumbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the tomatoes and gently scoop out their insides, being careful not to puncture the outer shell. Reserve the scooped-out pulp for another use or discard.

Step 3

Lightly drizzle the hollowed tomatoes with 1 tablespoon of olive oil and place them upside down on a paper towel to drain while preparing the filling.

Step 4

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly before chopping the spinach finely.
