Preheat your oven to 450°F (232°C).
Place the red bell peppers onto a baking sheet lined with parchment paper and roast for 20 minutes, turning once halfway through, until the skin is charred.
While the peppers roast, bring 8 cups of water to a boil in a large pot, add 1 tsp of salt, and cook the spiral pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
