  • 1 whole (about 1.5 pounds) pork tenderloin
  • 2 cups baby spinach

  • 0.3333 cup (grated) parmesan cheese
  • 2 cloves (minced) garlic
  • 2 tablespoons olive oil
  • 1 teaspoon (chopped) fresh rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces (12 inches each) kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Butterfly the pork tenderloin by slicing it lengthwise down the center, being careful not to cut all the way through. Open it up like a book and cover it with plastic wrap.

Using a meat mallet, pound the tenderloin to an even thickness of about 1/2 inch.
