Ingredients

  • 500 grams Fresh spinach
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thoroughly wash the spinach under cold running water to remove any dirt or grit. Drain well and pat dry with paper towels.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Heat a large skillet over medium heat. Add the extra virgin olive oil and let it warm for about 30 seconds.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn the garlic.

Step 5

Add the spinach to the skillet in batches, tossing gently with tongs as it wilts down. This should take 3-4 minutes in total.

Step 6

Once all the spinach is wilted and bright green, remove the skillet from the heat.

Step 7

Drizzle the lemon juice over the spinach and season with salt and black pepper. Toss to combine evenly.

Step 8

Transfer the spinach to a serving dish. Serve immediately as a side dish or a light appetizer.
