  • 500 grams fresh spinach, chopped
  • 2 tablespoons oil (vegetable or mustard oil recommended)
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon mustard seeds
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 medium green chili, finely chopped
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon salt
  • 50 milliliters water
  • 1 tablespoon lemon juice

Directions

Step 1

Wash the spinach thoroughly and chop it into bite-sized pieces. Set it aside to drain.

Step 2

Heat oil in a large skillet or pan over medium heat.

Step 3

Add the cumin seeds and mustard seeds to the hot oil. Let them sizzle for about 30 seconds until aromatic.

Step 4

Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 5

Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another minute until fragrant.

Step 6

Add the turmeric powder, ground coriander, and salt. Mix well to coat the aromatic mixture with spices.

Lower the heat slightly and start adding the chopped spinach in batches, stirring as you go. The spinach will wilt down quickly.
