Ingredients

  • 2 pounds Russet potatoes
  • 4 cups Fresh spinach leaves
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Whole milk
  • 2 cloves Garlic
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper, freshly ground

Directions

Step 1

Peel the russet potatoes and cut them into medium-sized chunks. Place them in a large pot and cover with cold water.

Step 2

Add 1 teaspoon of salt to the pot and bring the water to a boil over high heat. Reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes cook, wash the fresh spinach leaves thoroughly and pat them dry.

In a small skillet over medium heat, melt 1 tablespoon of butter. Mince the garlic cloves and sauté them in the butter for 1-2 minutes until fragrant.
