Ingredients

  • 4 pieces Large flour tortillas
  • 4 cups Fresh spinach
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Shredded mozzarella cheese
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Crumbled feta cheese
  • 2 tablespoons Butter (or olive oil)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Optional: Red pepper flakes

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of butter or olive oil.

Step 2

Add the spinach to the skillet and sauté for 1-2 minutes until just wilted. Remove from the skillet and set aside in a bowl.

Step 3

Wipe the skillet clean and return it to medium heat.

Step 4

Lay one flour tortilla flat in the skillet and sprinkle an even layer of mozzarella cheese over half of the tortilla.

Step 5

Add a layer of sautéed spinach and cherry tomato halves over the cheese, followed by a sprinkle of cheddar and feta cheeses.

Step 6

Season with a pinch of salt, black pepper, and optional red pepper flakes for a bit of heat.

Step 7

Fold the tortilla in half to create a half-moon shape, gently pressing down to hold the filling in place.

Step 8

Cook for 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is melted.

Step 9

Repeat with remaining tortillas and ingredients, adding more butter or oil to the skillet as needed.

Step 10

Allow the quesadillas to rest for 1 minute, then cut into wedges and serve warm. Optional: Serve with sour cream, salsa, or guacamole on the side.
