Ingredients

  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 cup Fresh spinach
  • 6 pieces Cherry tomatoes
  • 2 tablespoons Ricotta cheese
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Fresh parsley (optional, for garnish)

Directions

Step 1

In a medium bowl, crack the eggs and whisk them together with milk, salt, and black pepper until well combined.

Step 2

Wash and dry the spinach. Halve the cherry tomatoes and set them aside.

Step 3

Heat the olive oil in a nonstick skillet over medium heat.

Step 4

Add the spinach to the skillet and sauté for 1-2 minutes until wilted. Remove the spinach to a plate and set aside.

In the same skillet, pour the whisked eggs and tilt the pan to ensure the eggs spread evenly across the surface.

Allow the eggs to cook undisturbed for 1-2 minutes until the edges set while the center remains slightly soft.

Reduce the heat to low, and gently layer the sautéed spinach and halved cherry tomatoes onto one half of the omelette.

Add dollops of ricotta cheese on top of the spinach and tomatoes, spreading them evenly.

Cook for 1-2 more minutes until the omelette is fully set and the filling is warmed through.

Transfer the omelette to a plate, garnish with fresh parsley if desired, and serve immediately.
