Ingredients

  • 3 cups fresh spinach
  • 1 block (14 ounces) firm tofu
  • 2 garlic cloves
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 3 tablespoons nutritional yeast
  • 1 teaspoon dried dill
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Drain the tofu and press it to remove excess moisture. You can do this by placing the tofu between two plates and setting a heavy object on top for 15 minutes.

Step 2

Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the spinach until wilted (about 2-3 minutes). Remove from heat and let it cool slightly.

Step 3

In a blender or food processor, crumble the pressed tofu and add it along with the wilted spinach, garlic cloves, lemon juice, 1 tablespoon olive oil, nutritional yeast, dried dill, salt, black pepper, and water.

Step 4

Blend the mixture on high until smooth and creamy. If the dip is too thick, you can add a bit more water, 1 teaspoon at a time, until you reach your desired consistency.

Step 5

Taste and adjust the seasoning if needed by adding more salt, pepper, or lemon juice.

Step 6

Transfer the dip to a serving bowl and serve immediately with fresh veggies, crackers, or pita bread. Alternatively, refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
