Ingredients

  • 1 lb Ground beef (or ground turkey for a lighter option)
  • 1 Yellow onion, diced
  • 6 cups Fresh spinach, chopped
  • 1 packet Taco seasoning
  • 1.5 cups Salsa (mild, medium, or hot based on preference)
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 cup Corn (frozen or canned, drained)
  • 6 Flour or corn tortillas, cut into quarters
  • 2 cups Shredded cheddar cheese
  • 0.5 cup Sour cream (optional, for serving)
  • 2 tbsp Fresh cilantro, chopped (optional, for garnish)
  • 0 to taste Salt and pepper
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.

Step 3

Add the ground beef (or turkey) to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 7–8 minutes. Drain any excess grease if necessary.

Step 4

Stir in the taco seasoning and 1/4 cup of water, mixing well. Allow the mixture to simmer for 2 minutes to let the flavors meld.

Step 5

Add the chopped spinach, black beans, corn, and salsa to the skillet. Stir to combine and cook for 2–3 minutes until the spinach has wilted. Taste and adjust salt and pepper as needed.

Step 6

Grease a 9x13-inch casserole dish. Place a layer of tortilla quarters on the bottom of the dish, slightly overlapping them.

Step 7

Spread half of the beef and spinach mixture over the tortilla layer. Sprinkle 1 cup of shredded cheddar cheese over the mixture.

Step 8

Add another layer of tortilla quarters on top of the cheese, followed by the remaining beef and spinach mixture. Finish with another cup of shredded cheddar cheese evenly spread across the top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 11

Serve warm with optional sour cream and a sprinkle of fresh cilantro for garnish. Enjoy!
