Ingredients

  • 4 pieces Large tomatoes
  • 4 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 0.5 cup Onion, finely diced
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Breadcrumbs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried basil
  • 0.5 teaspoon Dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off of the tomatoes and scoop out the insides with a spoon, leaving a hollow shell. Reserve the insides in a bowl for later use.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 4

Add the minced garlic and diced onion to the skillet, sautéing for 2-3 minutes until fragrant and softened.

Step 5

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. If needed, work in batches to fit all the spinach.

Step 6

Mix in 2-3 tablespoons of the reserved tomato insides, discarding the rest, and cook for another minute.

Step 7

Remove the skillet from heat and stir in the grated Parmesan, breadcrumbs, salt, black pepper, dried basil, and dried oregano until well combined.

Step 8

Rub the remaining 1 tablespoon of olive oil on the outside of the hollowed tomatoes.

Step 9

Stuff each tomato with the spinach mixture, packing it gently with a spoon.

Step 10

Place the stuffed tomatoes in a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until the tomatoes are tender and the tops are golden brown.

Step 11

Allow the stuffed tomatoes to cool slightly before serving. Enjoy!
