Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Gently clean the Portobello mushroom caps with a damp paper towel and remove the stems. Carefully scrape out the gills using a spoon to create space for the stuffing.
