Ingredients

  • 20 pieces Jumbo pasta shells
  • 4 cups Fresh spinach
  • 2 cups Ricotta cheese
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 1 large Egg
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 3 cups Marinara sauce

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil and cook the jumbo pasta shells until they are al dente (follow the package instructions, typically 10-12 minutes). Drain, rinse under cold water, and set aside.

Step 3

In a medium skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Step 4

Add fresh spinach to the skillet and cook, stirring occasionally, until wilted (about 2-3 minutes). Remove from heat and allow to cool slightly.

Step 5

In a large mixing bowl, combine ricotta cheese, 1 cup shredded mozzarella, grated Parmesan, 1 egg, cooked spinach, salt, black pepper, and Italian seasoning. Mix well until the filling is evenly combined.

Step 6

Spread 1 cup of marinara sauce evenly across the bottom of a 9x13-inch baking dish.

Step 7

Using a spoon or piping bag, fill each cooked pasta shell with the spinach and cheese mixture. Place the stuffed shells in the baking dish, open side up, arranging them snugly together.

Step 8

Pour the remaining marinara sauce over the stuffed shells, covering them evenly. Sprinkle the remaining 0.5 cup of shredded mozzarella cheese on top.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Step 10

Remove from the oven and let the dish rest for 5 minutes before serving. Enjoy your Spinach Stuffed Pasta Shells!
