Ingredients

  • 12 pieces manicotti shells
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 4 cups fresh spinach, chopped (or thawed frozen spinach, squeezed dry)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 cups marinara sauce
  • 1 tablespoon olive oil (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.

Step 2

Bring a large pot of salted water to a boil. Cook the manicotti shells according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Lay the shells on a baking sheet to prevent them from sticking.

Step 3

In a large mixing bowl, combine the ricotta cheese, 1.5 cups of mozzarella, Parmesan cheese, chopped spinach, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined and set aside.

Step 4

Carefully spoon the cheese and spinach mixture into a large resealable bag. Cut off one corner of the bag to create a piping bag, or use a piping bag if you have one.

Step 5

Fill each manicotti shell with the cheese mixture, ensuring that they are fully but not overfilled.

Step 6

Spread 1.5 cups of marinara sauce evenly over the bottom of the prepared baking dish.

Step 7

Arrange the filled manicotti shells in a single layer in the dish. Cover with the remaining marinara sauce, making sure all the shells are coated.

Step 8

Sprinkle the remaining 0.5 cup of mozzarella cheese evenly over the top.

Step 9

Cover the dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.

Step 10

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Allow the baked manicotti to rest for 5 minutes before serving. Enjoy your delicious Spinach Stuffed Manicotti!
