Ingredients

  • 2 large Cucumber
  • 2 cups Fresh spinach
  • 4 oz Cream cheese
  • 1 clove Garlic
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tsp Lemon juice
  • 1 tsp Chopped fresh parsley
  • 2 tbsp Grated Parmesan cheese

Directions

Step 1

Wash the cucumbers and pat them dry. Slice the cucumbers into 3-inch-long segments.

Step 2

Using a small spoon or melon baller, carefully hollow out the center of each cucumber segment, leaving the bottom intact to create a 'case.' Set aside.

Step 3

Heat a medium skillet over medium heat and add the olive oil.

Step 4

Mince the garlic clove and sauté it in the olive oil until fragrant, about 30 seconds.

Step 5

Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
