Preheat your oven to 375°F (190°C).
Place the chicken breasts on a cutting board. Using a sharp knife, slice each chicken breast horizontally but not completely through to create a butterfly cut. Open them like a book.
Cover the chicken breasts with plastic wrap and gently pound them with a meat mallet until they are about 1/4-inch thick. Set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, combine the cooked spinach, cream cheese, Parmesan cheese, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix until well combined.
Spread an even layer of the spinach mixture over one side of each pounded chicken breast.
Sprinkle some shredded mozzarella cheese on top of the spinach filling.
Starting at one end, tightly roll up each chicken breast, enclosing the filling. Secure each roll with toothpicks or kitchen twine to keep them sealed.
Brush the outside of each chicken spiral with the remaining olive oil. Sprinkle the remaining salt, black pepper, and paprika evenly over the rolls.
Place the stuffed chicken spirals seam-side down in a baking dish.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Remove toothpicks or twine before serving. Slice each spiral into rounds if desired, for an elegant presentation.
