Ingredients

  • 4 pieces Chicken breasts
  • 4 cups Fresh spinach
  • 4 ounces Cream cheese
  • 2 pieces Garlic cloves, minced
  • 1 cup Mozzarella cheese, shredded

  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 piece Shallot, finely chopped
  • 2 tablespoons All-purpose flour
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 2 teaspoons Fresh tarragon, chopped
  • 1 cup Parmesan cheese, grated

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Using a sharp knife, carefully slice a pocket horizontally into each chicken breast without cutting all the way through.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
