Ingredients

  • 4 piece Chicken breasts
  • 3 cups Fresh spinach
  • 4 ounces Cream cheese
  • 1 cup Shredded mozzarella cheese
  • 1 quarter cup Parmesan cheese
  • 2 piece Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried Italian seasoning
  • 8 piece Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Prepare the filling by heating 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.

Step 3

Add the spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat and let it cool slightly.

Step 4

In a mixing bowl, combine cooked spinach, cream cheese, mozzarella cheese, parmesan cheese, salt (1/2 teaspoon), pepper (1/2 teaspoon), and Italian seasoning. Mix until smooth and well incorporated.

Step 5

Using a sharp knife, slice a pocket into each chicken breast, being careful not to cut all the way through.

Stuff each chicken breast with the spinach and cheese mixture, securing the openings with toothpicks to keep the filling inside.

In a small dish, mix the smoked paprika, remaining salt, and remaining pepper. Rub the mixture over the outside of each chicken breast.

Heat the remaining tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, until golden brown.

Step 9

Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 10

Remove the chicken from the oven and allow it to rest for 5 minutes. Remove toothpicks before serving and enjoy!
