Ingredients

  • 400 grams fresh spinach leaves
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 pieces garlic cloves
  • 2 medium tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 0.5 teaspoon red pepper flakes
  • 3 tablespoons fresh cilantro

Directions

Step 1

Wash the spinach leaves thoroughly under running water and chop them roughly.

Step 2

Finely chop the onion and garlic cloves. Dice the tomatoes.

Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
