Ingredients

  • 4 large Eggs
  • 2 cups Fresh spinach
  • 2 tablespoons Milk
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Feta cheese (optional)

Directions

Step 1

In a medium bowl, crack the eggs and whisk them with milk, salt, and black pepper. Set aside.

Step 2

Rinse and pat dry the fresh spinach. Mince the garlic cloves.

Step 3

Heat a non-stick skillet over medium heat and add the olive oil.

Step 4

Once the oil is warm, add the minced garlic and sauté for about 30 seconds until fragrant.

Step 5

Add the spinach to the skillet and cook, stirring occasionally, until wilted (about 2-3 minutes). Push the spinach to one side of the pan.

Step 6

Turn the heat down to low and pour the whisked eggs into the empty side of the skillet.

Gently stir the eggs using a spatula, combining them with the spinach as they begin to set. Cook until the eggs are fully scrambled but still soft, about 3-4 minutes.
