Servings: 4

Ingredients

  • 450 g fresh spinach
  • 3 tbsp pine nuts
  • 3 tbsp raisins
  • 2 tbsp olive oil
  • 2 unit garlic cloves
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp water

Directions

Step 1

Wash the spinach thoroughly and trim any tough stems. Pat dry with a clean towel or salad spinner.

Step 2

Thinly slice the garlic cloves and set aside.

Step 3

Heat a large skillet over medium heat and add the pine nuts. Toast them for 2-3 minutes, stirring frequently, until golden brown and fragrant. Remove from the skillet and set aside.

Step 4

In the same skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 30 seconds to 1 minute, until fragrant but not browned.

Step 5

Add the raisins to the skillet along with 2 tablespoons of water. Cook for 1-2 minutes, allowing the raisins to plump up slightly.

Step 6

Add the spinach to the skillet in batches if necessary, stirring gently to wilt the leaves. This should take about 3-4 minutes.

Step 7

Season the spinach with salt and black pepper, adjusting to taste.

Step 8

Sprinkle the toasted pine nuts over the spinach and gently combine.

Step 9

Transfer the dish to a serving plate or bowl and serve immediately as a side dish or part of a Mediterranean-inspired meal.
