  • 1.5 lbs salmon fillet (skinless)
  • 4 cups baby spinach

  • 2 cloves garlic (minced)
  • 1 tsp lemon zest
  • 2 tbsp fresh dill (chopped)
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup panko breadcrumbs (optional, for texture)
  • 1 sheet parchment paper or aluminum foil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
