Ingredients

  • 8 cups fresh spinach
  • 6 slices sliced bacon
  • 0.5 medium red onion
  • 3 large hard-boiled eggs
  • 3 tablespoons white sugar
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons water
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash and thoroughly dry the spinach. Place it in a large salad bowl.

Slice the bacon into small pieces. In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon pieces with a slotted spoon and set them aside on a paper towel-lined plate to drain.

Reserve about 2 tablespoons of the bacon grease in the skillet, discarding the rest. Keep the skillet over low heat.
