Ingredients

  • 8 cups fresh baby spinach
  • 6 slices bacon
  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 large hard-boiled eggs, sliced
  • 1 cup croutons

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic head to expose the cloves. Drizzle 1 tablespoon of olive oil over the top, wrap the garlic head in aluminum foil, and roast in the oven for 20 minutes until soft and golden.

Step 3

While the garlic is roasting, cook the bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to cool, then crumble into small pieces. Reserve the bacon grease in the skillet.

Let the roasted garlic cool slightly, then squeeze the soft cloves into a small bowl. Mash the cloves into a paste with a fork.
