Ingredients

  • 6 cups Fresh spinach leaves
  • 6 slices Thick-cut bacon
  • 0.5 medium Red onion
  • 2 large Hard-boiled eggs
  • 1 cup Cherry tomatoes
  • 0.25 cup Sliced almonds
  • 2 tablespoons Honey
  • 3 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the spinach leaves thoroughly, then place them in a large salad bowl.

Step 2

Slice the red onion into thin rings, halve the cherry tomatoes, and peel and quarter the hard-boiled eggs. Set aside.

Step 3

Toast the sliced almonds in a dry skillet over medium heat until golden brown, about 2-3 minutes. Remove from the skillet and set aside.

Step 4

In the same skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces.

Step 5

Reserve 2 tablespoons of the bacon drippings in the skillet for the dressing. Discard any excess drippings.

Step 6

To the reserved bacon drippings in the skillet, add the honey, apple cider vinegar, Dijon mustard, and olive oil. Whisk the mixture over low heat until well combined and warm. Season with salt and black pepper to taste.

Step 7

Assemble the salad by topping the spinach leaves with the red onion slices, cherry tomatoes, hard-boiled eggs, toasted almonds, and crumbled bacon.

Step 8

Drizzle the warm honey bacon dressing over the salad just before serving, and toss gently to combine.

Step 9

Serve immediately and enjoy!
