Ingredients

  • 6 cups Fresh spinach
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion, thinly sliced
  • 1 loaf French baguette
  • 0.5 cup Gorgonzola cheese, crumbled
  • 4 tablespoons Olive oil
  • 0.5 teaspoon Garlic powder
  • 8 pieces Bacon slices
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons White wine vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Slice the French baguette into 1/2-inch thick rounds. Brush one side of each slice with 2 tablespoons of olive oil, then sprinkle with garlic powder.

Step 3

Bake the baguette slices on the prepared baking sheet for 8 minutes, flipping halfway through, until golden and crispy.

Remove the croutons from the oven and immediately top each with a small amount of crumbled Gorgonzola cheese. Set aside to cool slightly.
