Ingredients

  • 6 cups Baby spinach
  • 8 whole Fresh figs
  • 4 slices Thick-cut bacon
  • 0.5 medium Red onion
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Toasted pecans (optional)

Directions

Step 1

Rinse and pat dry the baby spinach. Place the spinach in a large salad bowl.

Step 2

Cut the fresh figs into quarters and set them aside.

Step 3

Slice the red onion thinly and add it to the salad bowl with the spinach.

Step 4

In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate to cool, then crumble into small pieces.

Step 5

Reserve about 2 tablespoons of the bacon drippings in the skillet and discard the rest.

Step 6

With the skillet still on low heat, add balsamic vinegar, honey, Dijon mustard, and olive oil to the reserved bacon drippings. Stir well to combine, allowing the mixture to warm through, about 2 minutes.

Step 7

Season the dressing with salt and black pepper to taste. Remove from heat.

Step 8

Pour the warm dressing over the spinach, red onion, and figs. Toss gently to combine.

Step 9

Top the salad with the crumbled bacon and toasted pecans, if using.

Step 10

Serve immediately and enjoy the fresh, vibrant flavors!
