Ingredients

  • 6 cups Fresh spinach
  • 3 medium Beets
  • 4 oz Goat cheese
  • 0.5 cup Walnuts
  • 0.25 cup Olive oil
  • 3 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • 1 tsp Dijon mustard
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash the beets thoroughly, trim off the tops, and wrap each one in aluminum foil.

Place the wrapped beets on a baking sheet and roast in the oven for 40-45 minutes, or until they can be easily pierced with a fork.
