  • 6 cups Baby spinach leaves
  • 1 cup Fresh blueberries
  • 0.5 cup Crumbled blue cheese
  • 0.33 cup Pecans (toasted)
  • 0.25 cup Red onion (thinly sliced)
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper (freshly ground)

Directions

Step 1

Wash and pat dry the baby spinach leaves. Place them in a large salad bowl.

Step 4

Thinly slice the red onion and sprinkle the slices over the salad.

Step 5

Top the salad with the crumbled blue cheese for a creamy, tangy bite.

Step 6

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper to create the dressing.

Step 7

Drizzle the honey-balsamic vinaigrette evenly over the salad just before serving.

Step 8

Gently toss the salad to coat all ingredients in the dressing, serve immediately, and enjoy!
