Ingredients

  • 500 grams Fresh spinach leaves
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 1 inch Ginger
  • 2 pieces Green chilies
  • 1 large Tomato
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 3 tablespoons Plain yogurt
  • 2 tablespoons Oil (vegetable or mustard)
  • 0 to taste Salt
  • 100 ml Water

Directions

Step 1

Wash the spinach thoroughly to remove any dirt and set it aside to drain.

Step 2

Roughly chop the spinach leaves and blanch them in boiling water for 2-3 minutes. Drain and cool, then blend into a coarse puree. Set aside.

Step 3

Finely chop the onion, garlic, ginger, green chilies, and tomato.

Step 4

Heat the oil in a large pan over medium heat.

Step 5

Add the chopped onions and sauté until they turn golden brown, about 5-6 minutes.

Add the garlic, ginger, and green chilies, and sauté for another 2 minutes until fragrant.

Step 7

Stir in the chopped tomato and cook until it softens, about 3-4 minutes.

Add the ground cumin, coriander, turmeric powder, red chili powder, and salt. Sauté the spices with the tomato mixture for 2-3 minutes.
