Ingredients

  • 4 pieces Turkey breast fillets
  • 4 cups Fresh spinach
  • 1 cup Ricotta cheese
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lemon zest
  • 0.5 cup Chicken broth

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Place the turkey breast fillets between two sheets of plastic wrap and gently pound them with a meat mallet until they are about 1/4 inch thick.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Step 4

Add the fresh spinach to the skillet, cooking until wilted (about 2-3 minutes). Remove from heat and let cool slightly.

Step 5

In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, lemon zest, Italian seasoning, salt, and black pepper. Mix well.

Step 6

Place each turkey fillet on a flat surface. Spread the spinach-ricotta mixture evenly over each piece, leaving a small border around the edges.

Step 7

Carefully roll each turkey fillet tightly, securing it with kitchen twine or toothpicks.

Step 8

Heat the remaining tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the rolled turkey breasts on all sides until golden brown, about 2-3 minutes per side.

Step 9

Add the chicken broth to the skillet, then transfer the skillet to the preheated oven.

Step 10

Bake the turkey rolls for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Step 11

Remove the turkey rolls from the oven and let rest for 5 minutes before slicing.

Step 12

Serve warm with your favorite side dish, such as roasted vegetables or mashed potatoes.
