Ingredients

  • 3 cups Cooked white or brown rice
  • 4 cups Fresh spinach, chopped
  • 2 tablespoons Butter
  • 2 cloves Garlic, minced
  • 1 medium Yellow onion, finely chopped
  • 2 large Eggs
  • 1 cup Milk
  • 2 cups Shredded cheddar cheese
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 as needed Olive oil or cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish with olive oil or cooking spray.

Step 2

In a large skillet over medium heat, melt the butter. Add the chopped onion and cook for 3-4 minutes, or until softened and translucent.

Step 3

Add the minced garlic and chopped spinach to the skillet. Sauté for another 2-3 minutes, or until the spinach is wilted. Remove from heat and set aside.

Step 4

In a large mixing bowl, combine the cooked rice, spinach mixture, shredded cheddar cheese, and grated Parmesan cheese. Mix until well combined.

Step 5

In a separate bowl, whisk together the eggs, milk, salt, and black pepper. Pour this mixture into the rice and spinach mixture and stir until evenly incorporated.

Step 6

Transfer the mixture to the prepared casserole dish, spreading it out into an even layer.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 8

Remove the foil, sprinkle a bit of extra shredded cheddar or Parmesan on top if desired, and bake for an additional 10 minutes, or until the top is golden and bubbly.

Step 9

Let the casserole rest for 5-10 minutes before serving. Enjoy your Spinach Rice Casserole warm as a main or side dish.
