  • 1 cup red lentils (rinsed and drained)
  • 6 cups vegetable broth
  • 1 15-ounce can canned diced tomatoes
  • 4 cups baby spinach (packed)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 3–4 minutes until softened and translucent.

Stir in the minced garlic, diced carrots, and celery. Cook for another 3–4 minutes, stirring occasionally.
