Ingredients

  • 18 pieces Spinach Ravioli
  • 0.5 cup Sun-dried tomatoes in oil, drained and chopped
  • 0.25 cup Pine nuts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh basil, chopped
  • 0.25 cup Grated Parmesan cheese
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 cups Water (for cooking ravioli)
  • 1 teaspoon Salt (for boiling water)

Directions

Step 1

Bring 8 cups of salted water to a boil in a large pot.

Step 2

While the water is heating, toast the pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until they are golden brown and fragrant. Set aside to cool.

Step 3

In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant but not browned.
