Ingredients

  • 4 medium russet potatoes
  • 6 cups fresh spinach
  • 1 medium onion
  • 3 garlic cloves
  • 3 large eggs
  • 0.5 cup grated Parmesan cheese
  • 0.75 cup plain breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a standard 9x5-inch loaf pan with butter and sprinkle with a light layer of breadcrumbs to prevent sticking.

Step 2

Peel and dice the potatoes into 1-inch cubes. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 12-15 minutes, or until tender. Drain and mash until smooth. Set aside to cool slightly.

Step 3

While the potatoes cook, heat a large skillet over medium heat. Add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic cloves until fragrant and translucent, about 3-4 minutes.
