Ingredients

  • 2 sheets Puff pastry sheets
  • 8 oz Cream cheese
  • 10 oz Frozen chopped spinach, thawed and squeezed dry
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 large Egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper and set aside.

Step 2

On a lightly floured surface, roll out the puff pastry sheets to about 10x12 inches.

Step 3

In a medium mixing bowl, combine cream cheese, thawed and dried spinach, mozzarella cheese, Parmesan cheese, garlic, salt, and black pepper. Mix until smooth and evenly combined.

Step 4

Spread half of the spinach mixture evenly over each puff pastry sheet, leaving about 1/2 inch of border around the edges.

Step 5

Starting from the longer edge, roll each sheet into a tight log. Use a sharp knife to cut each log into 1/2-inch slices.

Step 6

Arrange the pinwheel slices on the prepared baking sheets, spacing them about 1 inch apart.

Step 7

Brush the tops of the pinwheels with the beaten egg to help them turn golden brown during baking.

Step 8

Bake in the preheated oven for 18-20 minutes or until the pinwheels are puffed and golden brown.

Step 9

Remove from the oven and allow them to cool for 5 minutes before serving.
