Ingredients

  • 500 grams Fresh spinach leaves
  • 2 tablespoons Olive oil
  • 2 large Garlic cloves
  • 3 tablespoons Pine nuts
  • 3 tablespoons Raisins
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Wash the fresh spinach leaves thoroughly under cold water and pat them dry using a clean kitchen towel or salad spinner.

Step 2

Peel and finely slice the garlic cloves.

Step 3

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the pine nuts and toast them lightly, stirring frequently, for 2-3 minutes until golden brown. Remove the pine nuts and set them aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce the heat to medium-low and add the sliced garlic. Sauté the garlic gently until it becomes fragrant and light golden in color, about 1-2 minutes. Be careful not to burn it.

Step 5

Add the raisins to the skillet and cook for 1 minute, allowing them to plump up slightly in the hot oil.

Step 6

Increase the heat to medium and add the spinach to the pan in batches, stirring frequently to wilt it down. If necessary, add more spinach as space allows until all 500 grams are wilted.

Step 7

Season the spinach with salt and black pepper, stirring well to combine.

Step 8

Once the spinach is fully wilted and tender, return the toasted pine nuts to the skillet. Mix gently to evenly distribute the ingredients.

Step 9

Remove the skillet from heat and transfer the spinach with pine nuts and raisins to a serving dish.

Step 10

Serve warm or at room temperature as a delicious and healthy tapas dish. Enjoy!
