Ingredients

  • 300 grams fresh spinach
  • 1 medium, finely chopped onion
  • 2 minced garlic cloves
  • 2 tablespoons olive oil
  • 100 grams, crumbled feta cheese
  • 2 large eggs
  • 100 grams breadcrumbs
  • 2 tablespoons, chopped parsley
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 tablespoons sunflower oil

Directions

Step 1

Wash the spinach leaves thoroughly, then blanch them in boiling water for 2 minutes. Drain and plunge into a bowl of cold water to stop the cooking process. Drain well and chop finely.

Step 2

In a frying pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

Step 3

In a large mixing bowl, combine the chopped spinach, sautéed onions and garlic, crumbled feta cheese, beaten eggs, breadcrumbs, chopped parsley, nutmeg, salt, and black pepper. Mix until well combined.

Shape the mixture into small patties, approximately 2 inches in diameter.
