Ingredients

  • 400 g fresh spinach pasta (or regular pasta if unavailable)
  • 300 g salmon fillet (skinless)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic cloves (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach leaves
  • 1 tsp lemon zest
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp crushed red pepper flakes (optional)
  • 2 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spinach pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, pat the salmon fillet dry with paper towels and season both sides with a pinch of salt and black pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the salmon and cook for 3-4 minutes on each side, until fully cooked and flaky. Remove the salmon from the skillet and set aside, covering it with foil to keep warm.

Step 4

In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 5

Slowly pour in the heavy cream, stirring constantly. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese until it melts and the sauce thickens slightly.

Step 6

Season the sauce with the lemon zest, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the crushed red pepper flakes, if using. Adjust seasoning according to your taste.

Step 7

Add the baby spinach leaves to the sauce and cook for 1-2 minutes, until wilted.

Step 8

Gently flake the cooked salmon into bite-sized pieces and add it to the sauce. Stir gently to combine.

Step 9

Add the cooked spinach pasta to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 10

Divide the pasta among serving plates, garnish with freshly chopped parsley, and serve immediately. Enjoy your Spinach Pasta with Salmon and Cream Sauce!
