Ingredients

  • 300 grams Pasta (rotini or bowtie)
  • 4 cups Fresh baby spinach
  • 1.5 cups Cherry tomatoes
  • 1 cup Feta cheese
  • 0.5 Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dried oregano
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the pasta in a large pot of salted boiling water according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, thinly slice the red onion, and coarsely chop the fresh spinach if needed.
