Ingredients

  • 8 sheets Fresh lasagna sheets
  • 300 grams Spinach (fresh or frozen)
  • 250 grams Ricotta cheese
  • 50 grams Grated Parmesan cheese
  • 1 large Egg
  • 0.25 teaspoons Nutmeg (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves (minced)
  • 500 milliliters Tomato passata
  • 1 teaspoon Dried oregano
  • 100 grams Grated mozzarella cheese

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

If using fresh spinach, rinse it thoroughly and wilt it in a dry pan over medium heat. If using frozen spinach, thaw it and squeeze out excess moisture. Chop the spinach finely.

In a large bowl, mix the chopped spinach, ricotta cheese, grated Parmesan, egg, nutmeg (if using), salt, and black pepper until well combined.

Lay out the lasagna sheets on a clean surface. Spoon an even layer of the spinach and ricotta mixture over each sheet, leaving a small border around the edges.

Roll up each lasagna sheet tightly into a cylinder. If the sheets are too stiff to roll, you can briefly blanch them in boiling water to soften them.
