Ingredients

  • 300 grams dry penne pasta
  • 250 grams fresh spinach
  • 200 grams ricotta cheese
  • 200 grams shredded mozzarella cheese
  • 50 grams grated Parmesan cheese
  • 2 large eggs
  • 2 pieces garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)
  • 1 tablespoon unsalted butter
  • 3 tablespoons breadcrumbs

Directions

Step 1

Preheat your oven to 190°C (375°F) and lightly grease a 9-inch springform pan with butter.

Step 2

Bring a large pot of salted water to a boil. Add the penne pasta and cook until just al dente according to package instructions. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat, drain any excess liquid, and let it cool slightly.

In a large mixing bowl, combine the ricotta cheese, 150 grams of shredded mozzarella, grated Parmesan, eggs, cooked spinach, salt, black pepper, and nutmeg. Mix well until fully combined.
