Ingredients

  • 12 oz Penne pasta
  • 1 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 8 oz Baby spinach, fresh
  • 1 cup Ricotta cheese
  • 1 Egg
  • 1 cup Parmesan cheese, grated
  • 2 cups Marinara sauce
  • 2 cups Mozzarella cheese, shredded
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil or cooking spray.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the baby spinach to the skillet in batches, stirring until wilted. Once all the spinach is cooked, remove from heat and let it cool slightly.

Step 5

In a mixing bowl, combine the ricotta cheese, egg, 1/2 cup of Parmesan cheese, cooked spinach, salt, and black pepper. Mix until well combined.

Spread 1/2 cup of marinara sauce in the bottom of the prepared baking dish. Add half of the cooked pasta on top and spread it out evenly.

Dollop half of the spinach and ricotta mixture over the pasta, then pour 1 cup of marinara sauce on top. Sprinkle 1 cup of shredded mozzarella cheese over the layer.

Repeat the layers: Add the remaining pasta, dollop the remaining ricotta mixture, pour the rest of the marinara sauce, and finish with the remaining mozzarella cheese.

Step 9

Sprinkle the remaining 1/2 cup of Parmesan cheese evenly on top. If desired, sprinkle a pinch of red pepper flakes for extra heat.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 11

Remove the foil and bake for another 10-15 minutes, or until the top is bubbly and golden brown.

Step 12
