Ingredients

  • 150 g Fresh spinach leaves
  • 1 cup Chickpea flour (Besan)
  • 2 tbsp Rice flour
  • 0.5 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 0.5 tsp Cumin seeds
  • 0.25 tsp Carom seeds (Ajwain)
  • 0.25 tsp Baking soda
  • 1 tsp Salt
  • 0.75 cup Water
  • 2 cups Vegetable oil (for deep frying)

Directions

Step 1

Wash the spinach leaves thoroughly and pat them dry with a clean kitchen towel. Roughly chop the leaves and set aside.

Step 2

In a large mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, carom seeds, baking soda, and salt.

Gradually add water to the dry ingredients, whisking continuously to form a smooth, lump-free batter. The consistency should be thick enough to coat the spinach but not too runny.

Add the chopped spinach leaves to the batter and mix until the leaves are evenly coated.
