Ingredients

  • 120 grams baby spinach leaves
  • 80 grams black or green olives, sliced
  • 1 teaspoons dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoons granulated sugar
  • 400 grams pasta of your choice
  • 10 leaves fresh basil leaves, for garnish
  • 50 grams Parmesan cheese, grated, for serving (optional)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the minced garlic and red chilli flakes to the pan, stirring frequently, and cook for 1–2 minutes until fragrant.

Step 3

Pour the canned crushed tomatoes into the pan and stir well to combine. Bring the sauce to a simmer.

Step 4

Add the dried oregano, salt, black pepper, and sugar to the sauce. Stir to incorporate. Simmer uncovered for 10–15 minutes, stirring occasionally to thicken the sauce slightly.

Step 5

Meanwhile, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta and set aside.
