Ingredients

  • 12 ounces egg noodles
  • 8 cups fresh spinach, washed and roughly chopped
  • 4 large eggs

  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 4 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons ground nutmeg
  • 0.5 cup breadcrumbs
  • 1 tablespoon olive oil or melted butter (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray.

Step 2

Bring a large pot of salted water to a boil. Add the egg noodles and cook until just al dente according to package instructions. Drain and set aside.

Step 3

Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the garlic and cook for an additional 1-2 minutes, until fragrant.
